If you’ve followed me for any amount of time, you know-I LOVE BRUSSELS SPROUTS! You also know I am from Louisiana and I love our heritage and culture. Yes I do! I’ve enjoyed brussels sprouts with thyme, apples or just plain old sea salt and pepper. On one of my various cooking quests, I attempted something different with the baby cabbages and it was an instant hit with my palate! From this attempt came Mardi Gras Brussels Sprouts! Mardi Gras Brussels Sprouts
2 lbs of brussels sprouts (Fresh is better)
1 tbsp of turmeric
1/3 cup of chopped purple onion
1/2 tbsp Trader Joe’s Everyday season
1/2 tsp sea salt
1/2 tsp pepper
2 tbsp Pompeii Pomegranate Red Wine Vinegar.
1 tablespoon of Olive oil.
Clean brussels sprouts. Trim and halve brussels sprouts lengthwise. Remove ragged outer leaves.
In a medium to large pan, heat olive oil over medium-high. Olive oil burns easily. Be careful.
Add brussels sprouts, season with salt and pepper or everyday seasoning. Add purple onion. Cook, stirring frequently, until caramelized, 8 to 10 minutes.
Add *vinegar and cook until evaporated, about 2 minutes. Add turmeric and toss to coat. Serve immediately.
*BONUS–Want an alternative to Pomegranate Red Wine vinegar? Substitute with lemon juice. Delish!
